Molasses Raisin Walnut Cookies


1 1/2 cups all-purpose flour
3/4 tsp. baking soda
3/4 tsp. salt
1/2 cup sugar
1 stick unsalted butter, at room temperature
1 large egg
1/4 cup molasses
1/2 cup walnut pieces
1/2 cup raisins


Preheat oven to 350 degreas Fahrenheit, with a rack in the middle.
Line two baking sheets with parchment paper.
Whisk together the flour, baking soda and salt.
In a large bowl, beat together the butter and sugar with an electric mixer until the butter looks pale and creamy, about 4 minutes.
Beat in the egg and molasses.
With a large spoon, stir in the flour mixture until it is just combined.
Stir in the walnuts and raisins.
Place rounded teaspoonfuls of the dough on the baking sheets, spacing about 1 inch apart.
Bake in batches until the cookies are evenly brown, 8 to 9 minutes.
Let the cookies cool for a minute on the baking sheets before transferring them to a cooling rack.
Store airtight.
